The Chouriço is a Portuguese sausage made from pork meat with a slightly smoky taste. The best way to enjoy it is as an "assado de chouriço," grilled over an open flame. More than just a dish, it's a culinary experience in itself!
When you order "chouriço assado" in a restaurant, your server brings the sausage to your table in a clay dish filled with brandy. Then, they set fire to the brandy right in front of you. Once on the table, you can cook the chouriço as long as you like. For a perfect "chouriço assado," the outside of the sausage should be slightly burnt and crispy.
